Saag Pizza with Tofu Paneer
Try this flavorful fusion pizza for a quick and easy meal!


Saag paneer is a beloved staple of Indian cuisine, celebrated for its silky, spiced spinach and cubes of mild, pan-seared paneer. But here's a pro-tip: that lush, savory saag makes for an incredible pizza base.
I first fell in love with curry pizza while living in the SF Bay Area. Local shops would swap traditional tomato sauce for vibrant ladlefuls of mixed veggie curry, tikka masala, and shahi sauce. Since vegan options weren't always available, we started experimenting in our own kitchen. This recipe is the result of that obsession—a quick, easy, and totally plant-based way to level up your pizza night.
Ingredients
Prepared pizza dough (available at Whole Foods, Trader Joe's and some big box grocers in the deli or frozen aisle)
16 oz. prepared saag from your favorite Indian takeout (specify vegan - no ghee, cream, or paneer)
8 oz firm tofu, cubed
Red chili flakes (optional)
Directions
Pre-heat your oven to its highest temperature (ideally 500 - 550 F) for about 30 minutes. If using a pizza stone, make sure it's pre-heating in the oven.
Prepare Crust
- Allow dough ball to come to room temperature.
- On a piece of parchment paper, shape the dough into a 12-inch circle starting from the interior and moving outward, using a rolling pin or your hands. The dough might try to shrink back towards its center. Just be patient and keep working it!
- Fold over the edge of the dough for a more defined crust and brush it with olive oil.
- For a thicker crust, allow the dough to rest for 30 minutes.
Add Toppings and Cheese
- Spoon prepared saag over the dough. Thicker is better, in my opinion!
- Place cubes of tofu on top of the saag.
- Sprinkle grated mozzarella over everything.
Bake
- Holding one edge of the parchment paper, slide the pizza onto a baking sheet or onto the pre-heated pizza stone.
- Bake for 8 - 12 minutes; the timing depends on the thickness of the dough and the temperature of your oven.
- The pizza is ready when the crust and bottom are golden brown. Use a spatula to gently lift one side of the pizza to check the bottom.
- If the cheese isn't fully melted or browning, you can place the pizza under the broiler for 30 seconds. Make sure to keep an eye on it so it doesn't burn!
- Remove pizza from oven and sprinkle with red chili flakes, if using. Cilantro or Peaceful Rebel Parmesan are also great toppings!
- Cut into 8 slices and enjoy!
